I love a good old sandwich. Ezekiel 4:9 bread, vegetarian protein (oat burgers, tempeh, or hummus), veggies, sauce, done. I also love sauerkraut and it made an extra pickle-y addition to a sandwich that already had pickles in it. Double the pickles double the fun.

Another 5 minute dessert for the books! As you know I have a love/hate relationship with peaches... and sometimes peaches don't love me back. If that's the case then I freeze the subpar devils and try to figure what else to do with them! When I was about 8 or 9 years old my family spent 5 weeks traveling around Australia and New Zealand. We spent 1 whole week at a college while my dad was teaching a class (or something... it was a long time ago). We ate at the school cafeteria everyday and the one thing that sticks out the most to me about that whole trip (besides the beaches, koalas, and kangaroos) was that this cafeteria had peach soft serve ice cream. I had a delicious cone everyday and it was divine. I'd never heard of peach ice cream before! I'd tried plenty of varieties that included chocolate, but peach ice cream? What is this? Well, I don't eat normal ice cream anymore... but I still make my own version of peach ice cream. Easy and creamy the way ice cream should be!
Every year when I was growing up I asked for the same birthday cake. I wanted the German Chocolate Cake Frosting (and pecan glaze) on a yellow cake instead of chocolate! My mom faithfully made a Betty Crocker yellow cake mix and layered it with rich chocolate butter cream frosting and made that infamous coconut pecan dream to coat the top. Sweetened condensed milk, gobs of sugar, and a few very hyperactive children later... you get a birthday coma of happiness (and I loved my mom MORE for it). Flash forward a few years my sister said I should make a German Chocolate Cake that she could feel good about giving to her kids (what a good mommy). One day while killing time at Costco (as my husband went up and down each aisle excitedly searching for a specific extension cord he decide we needed ❤ I absolutely love my nerd) I started looking at the cooking magazines and after seeing a recipe for caramel chocolate cake I got an idea to use date paste as the binder and sweetener for the coconut pecan frosting (which means zero risk of burning the frosting because you don't have to heat it. Yes, I've done that before)!

The holidays are over and it is time to HIT those resolutions in the FACE, in a good way. I rarely make stovetop oats but this weekend I ate it twice. Sometimes you just want something hot for breakfast and you want it fast! I'm sure we all ate too much food this holiday and stayed up way too late last night but here is a breakfast to get you back on track.
