How To: Make Almond Milk

We drink A LOT of unsweetened almond milk in this house. We buy the kind without any sugar added so you're basically spending almost 4 dollars for a half gallon jug of flavored water (with mysterious preservatives added). I know there are some things added to Almond Milk that might be scary. I've heard people talk about it occasionally, but I wasn't yet ready to transition myself. Baby steps, am I right? One day we ran out and I wanted a glass of almond milk with my Chocolate Maple Syrup Cupcake (link below)! That first glass was a little sludgy. I figured I would need to strain or filter it out in the future but that sounded like a lot of work and GREATLY reduced any eagerness I had towards making it again in the future. The solution? Add more water and no filtering necessary!!! This recipe produces 8 cups (2 quarts) of unsweetened almond milk which translates to about 40 calories a cup and 2% calcium (which comes naturally from the almonds). I bought my almonds from Costco and did my own price analysis. It's about 36 cents a quart or 90 cents for a half gallon. If you choose to add the date(s) to the recipe then it's about 10 cents more per gallon. There it is ready to go! Just shake it up every time you are ready to pour. This easy recipe will take you less then 5 minutes to prepare and is 4 times cheaper then purchasing at the grocery store (not to mention the time it would have taken to drive to there). You also know 100% whats inside your milk, no mystery necessary! Drink up my friends!
Ingredients
- 8 c cold water
- 1/2 c almonds
- 1 pinch salt
- 1-2 dates (optional)
Directions
- Pour 2 cups water, 1/2 cups almonds, a pinch of salt, and 1-2 dates (if using) into your blender. Blend until super smooth (1-3 minutes).
- Add 6 cups of cold water and stir. Ready to serve.
- Always shake/stir before serving.
- Store in the refrigerator for up to 1 week.
