100% Whole Wheat Vegan Pull-Apart Rolls

I don't like making bread because it takes so long for the yeast to rise and then you punch it down and have to let it rise again and it seems like a long long nightmare. But if you want springy bread rolls (without buying them) you need to put in the work. My husband wanted bread rolls for Thanksgiving dinner (which is only right and natural and fair). Since my attempt at vegan Butterhorn Rolls last year was an epic fail (dark brown flax seeds just ruined the look and taste) I thought that I would try my hand at simple whole wheat bread rolls (with golden flax seeds that might blend in better). I'm glad I did! Especially when my parents thought they were from a store (because they were so good). That is your proof that these rolls didn't taste as healthy as they actually were. I searched through lots of different recipes and finally came across the recipe (link below) that I used as a base but changed several things to make them 100% whole wheat AND vegan. I think it worked. Keep this recipe in your back pocket for the next time you need some rolls to impress. Bread Roll Ingredients
- 2 3/4 cup white whole wheat flour
- 1 teaspoon kosher salt
- 1 cup very warm water, divided
- 2 1/4 teaspoons active dry yeast
- 2 tablespoons honey, divided
- 1 tbsp ground golden flax seeds plus 2 tbsp water
- 2 tablespoons earth balance, melted (or olive oil)
Directions
- Combine 1/4 cup warm water, yeast, and 1 tablespoon honey in a small glass bowl, stir and let sit for 5 minutes.
- In a large bowl combine 1 tablespoon ground golden flax seeds and 2 tablespoons of water. Set aside for 3-5 minutes until it forms a thick flax gel.
- In another large bowl (or Kitchen Aid basin) combine white whole wheat flour and salt.
- Now mix 3/4 cup warm water, 1 tablespoon honey, and 2 tablespoons melted earth balance butter with the flax seed gel. Stir to combine.
- Using the dough hook on your mixer (or a large spoon) combine all ingredients together. Knead the dough on medium speed until the dough comes together and forms a ball.
- Remove dough and rub the bowl with a little olive oil. Return dough, cover bowl with a damp cloth, and place in a warm spot for 25 minutes.
- Lightly grease a baking dish, pie pan, or cake pan (8×8 pan works great).
- After 25 minutes punch the dough down. Divide the dough into 9 even balls. Place the balls side by side in the baking dish and cover with a damp towel again.
- Preheat the oven to 400 degrees F.
- After about 20 minutes the dough balls should be round and fluffy and ready to bake.
- Bake the rolls in the middle of the oven for 20 minutes or until lightly browned on top.
- Remove and serve immediately.
How is honey vegan ?
You can use brown rice syrup.
