Some days I don't want to eat a salad. I know I should eat salads and that raw vegetables are good for me, but so are cooked vegetables so I eat a big plate of steamed green beans or zucchinis instead. Some days I DO want a salad but I don't have any lettuce or kale or cabbage. On this day I used the grater attachment for my food processor and had this salad made in just a few minutes. Done! Sometimes eating healthy takes thinking outside the box. We ate this salad with rice, potatoes, and beans. Then for dinner we put it on an Ezekiel 4:9 english muffins with my oat burgers, pickles, and ketchup. It was perfect.

  1. Wash carrots and zucchinis and cut off the ends. Peel carrots and using a kitchen grater (or the grating attachment of your food processor) grate zucchini and carrots.
  2. Mix Tangy Tofu Dressing, sun dried tomatoes, and grated vegetables together until dressing is fully incorporated. Adjust dressing and vegetables to taste.
  3. Serve cold.
