Oil Free Fries with Sriracha Dipping Sauce

Potatoes get a bad rep for being a starchy food, but potatoes don’t make you fat. Fat makes you fat. People gain weight from potatoes because they are eating the wrong kinds of potatoes. People are eating French fries, hash browns, tator tots, and mash potatoes with gravy! The lone potato has a lot of great benefits on its own. Potatoes have Vitamin C, Calcium, Iron, Vitamin B-6, and Magnesium. Potatoes are low in calories and have almost zero fat. Potatoes are starchy and hardy and will help keep you full and satisfied especially when paired with beans and other vegetables.

Ingredients
Potato Fries
- 2 small potatoes, russet
- ½ tsp rosemary
- ½ tsp italian herb
- ½ tsp garlic powder
- ½ tsp salt
Sriracha Dipping Sauce
- 1 tbsp sriracha
- 1 tbsp mustard, brown spicy
- 1 tbsp tahini
- 1 tbsp water
Directions
- Clean and slice potatoes to desired thickness.
- Spread slices onto a microwave safe plate.
- Sprinkle with salt, rosemary, italian herb, and garlic powder (to taste).
- Place in microwave and “bake” for 7-8 minutes.
- In a small bowl mix tahini sauce, mustard, sriracha, and water and stir until smooth.
- Serve.
