Mushrooms are nutrient powerhouses! Just eating half a mushroom a day (or 15 a month) can help lower your risk of breast cancer by 64%!!!!! Seriously? That's absolutely insane! It's too bad so many people dislike mushrooms! Mushrooms have antioxidants, selenium, folate, vitamin D, vitamin C, potassium, protein and fiber! Research shows that consuming mushrooms can help to lower your risks of certain cancers and heart disease. Mushrooms are able to help manage both type 1 and type 2 diabetes and boost immunity. Mushrooms can even help with weight management due to the fiber which helps to keep you satiated. Refusing to eat mushrooms is just a big pile of shiitake. 😮

  1. Wash and chop or grate mushrooms into tiny pieces.
  2. Combine all ingredients together in a rice cooker and turn on (or use a slow cooker on the LOW setting).
  3. If you do not have a rice cooker and would like to make the risotto over the stove then follow the recipe directions from this website. (It is a lot easier to just throw it in a slow cooker or rice cooker)
  4. If rice is still too chewy when the rice cooker is done then add another 1/2 c water and turn the rice cooker back on for another 15-30 minutes.
