Whole Wheat Maple Syrup Waffles

When I was single my dinner every night was popcorn and fruit. I really like routines and once I'm in one it's hard for me to break away from it. Knowing this about myself I would occasionally get worried about what marriage might be like and how I would have to change and start eating normal foods for dinner. Obviously this isn't some huge life changing thing, but I really liked eating popcorn! Then Jason found me and I soon learned that my soon-to-be husband liked simple dinners too! Neither of us desire to eat stereotypical dinner foods for dinner. Jason usually wants another bowl of oats and berries, a Chocolate Chip Smoothie, or peanut butter apple sauce toast when he gets home. We enjoy simple dinners or eating breakfast type foods together. I made these waffles for breakfast a few weeks ago, but I know my husband would love having them for dinner as well. These are some of the best waffles I've made for us and the recipe is definitely a keeper!

Ingredients

  • 1.5 c almond milk
  • 1.5 tbsp lemon juice
  • 2 c white whole wheat flour
  • 2.5 tsp baking powder
  • 2 tbsp ground flax meal
  • ½ tsp cinnamon
  • 2 tbsp canola oil
  • ¼ c maple syrup
  • ½ tsp vanilla
  • pinch of salt

Directions

  1. Preheat your waffle iron.
  2. In a small bowl, combine almond milk and lemon juice. Set aside.
  3. In a medium bowl, combine white whole wheat flour, baking powder, flax meal, cinnamon, and salt.
  4. Add canola oil, vanilla, and maple syrup to your almond milk and lemon juice and whisk together. Mix the liquid ingredients with the dry ingredients until just combined (don’t over mix).
  5. Spray your waffle iron with a little cooking spray and pour about 1/4 cup of batter for each waffle square (depending on how big your waffle iron is). When the light says the waffle is ready gently check to for done-ness. Some waffles take a bit longer to cook.
  6. Serve immediately. Don’t forget your Peach Compote!!!! 
  7. Freeze leftovers.

  1. Love the pic, so awesome!! Love waffles too, I’ve found an awesome one as well! No dairy and no oil. I substituted the oil with apple sauce and it worked out great! I like eating breakfast stuff for dinner as well, but I have been trying out a bunch of vegan recipes as of late.
