My FAVORITE thing about Thanksgiving as a kid was eating leftover pie for breakfast the next morning. Eating that cold pumpkin pie with the solidified whipped cream topping and the crisp cold apple pie was the BEST! Apple pie HAS to have ice cream, but if you can’t eat ice cream for breakfast (but for some reason pie is ok) then make sure your pie is COLD. Today’s experimental breakfast (because I bought granny smith apples at Costco like an idiot. Why do I need 20 granny smith apples?) wasn’t the same sugar bomb that I loved and craved as a kid, but this morning it was pretty dang good, until I added a few tablespoons of coconut cream on top and catapulted my bowl of Apple Pie Overnight Oats to a separate universe. Recipe over.

Ingredients

  • 1 c old fashioned rolled oats
  • 1 tbsp ground golden flax seeds
  • 2 heaping tbsp date paste (or 3 large medjool dates, pitted and chopped)
  • 1 large granny smith apple
  • 1/4 tsp cinnamon
  • 3/4 c unsweetened almond coconut milk (almond breeze or silk)
  • 2 tbsp full fat coconut milk (optional)

Directions

  1. Wash and roughly chopped an apple and remove seeds. Grate with a cheese grater or use the cheese grater attachment for a food processor (this is the one my mother in law found in her garage and gave me… it is an oldie but a total goody. It still has ALL its attachments including two different sizes for grating fruits and vegetables). Using a food processor is fast and will then only take you 30 seconds or less.#worthit
  2. In a medium sized bowl thoroughly combine oats, flax seeds, date paste (or chopped dates), cinnamon, grated granny smith apple, and almond coconut milk.
  3. Cover with lid and place in refrigerator for at least 30 minutes (or up to a week).
  4. I like to eat it cold, but you can eat it room temp or warmed up too.
  5. If desired drizzle thick coconut milk (or cream) over the top.
  6. Make several portions at a time so that you won’t ever have to think about breakfast again for few days. Just grab and go!
