Coconut Overnight Oats

When you have a nice creamy can of coconut milk and you want coconut whipped cream, the easy thing to do would be to leave that can in the fridge overnight. Overnight the coconut cream will magically separate from the coconut water. Whip up that coconut cream in a blender with a bit of maple syrup and you will get beautiful coconut whipped cream which is perfect on pies. THANKSGIVING IS COMING UP. But what do you do with that coconut water? In my opinion, it doesn't taste very good on its own. I finally figured out what I want to do with it! Cold coconut overnight oats! Add some juicy red grapes, crispy coconut flakes, and crunchy cocoa nibs for a special treat. You can't even stop. YES PLEASE.

Ingredients

  • 1 c old fashioned rolled oats
  • 1 c coconut water
  • 1/2 tbsp chia seeds
  • 2 tbsp raisins
  • 1 c red grapes, sliced
  • 1 tbsp cocoa nibs
  • 1 tbsp coconut flakes

Directions

  1. Mix all ingredients together in a bowl.
  2. Chill for at least 30 minutes.
  3. Eat cold.
  4. Store for up to one week in an airtight container.
  5. Add dates, peanut butter, or cinnamon for a fun twist.
